Sugarcane decaf is coffee that has had its caffeine removed using the ethyl acetate (EA) process, which uses a natural solvent derived from fermented sugarcane.This method is known for preserving the coffee's original flavor more effectively than some other decaffeination techniques, resulting in a balanced and often sweeter cup.The process involves steaming the green beans to open their pores, soaking them in a solution of water and ethyl acetate to remove the caffeine, and then rinsing and drying them.

This coffee is grown between 1,200 and 1,900 meters above sea level in sandy and clay soil. They grow a mix of castillo and caturra varieties, and the coffee is fully washed and dried either on patios or on raised beds, depending on the topography and other conditions.
