Vietnam is the world's second-largest coffee producer, primarily growing Robusta beans and accounting for over 18% of global coffee exports. First introduced by the French in 1857, the Vietnamese coffee industry developed through the plantation system, becoming a major economic force in the country.

Catimor is a hybrid coffee varietal created in 1959 by crossing the Timor Hybrid (a natural Arabica-Robusta hybrid) and Caturra. It is known for high yields, disease resistance, and traits from both parent varietals, making it popular with farmers. It can have flavor notes of dark cherry, chocolate, and plum.

The anaerobic coffee process involves fermenting coffee cherries in sealed, oxygen-free tanks to create unique and often intense flavors. During this process, carbon dioxide builds up, pushing out oxygen and creating a controlled, slow fermentation where microorganisms break down sugars differently, leading to complex notes like winey or tropical fruit flavors. This method requires specialized equipment and meticulous control but gives producers more control over the fermentation and can result in higher cup scores.
